Coconut and Cherry Brownie Recipe
(aka Ken’s Killer Ultimate Coconut & Cherry Brownies)
Start with any brand or box of brownie mix, however, if possible I would prefer to use Trader Joe’s Brownie Truffle Baking Mix because it contains real Dutch Coco and Chocolate Chips.
Ignore the directions on the box
In a large mixing bowl add:
Brownie mix
1/2 cup of coconut flakes
1/2 cup of chopped walnuts
1/3 to 1/2 cup of diced dried cherries
1/3 of a cup of white chopped chocolate bits or chips (if not using a Trader Joes Brownie mix)
2-3 eggs
1/2 cup of coconut oil
1/3 or 1/2 cup of water or milk to get proper consistency
Pour mix into 16” x 9” baking pan pre-greased with coconut oil spray
Bake at 350F for 30 minutes.
Serve warm with French Vanilla ice-cream that has real vanilla bean flakes, if your feeling fancy garnish with 1 or 3 chocolate mint leaves.
